Yogurt & Curry Chicken Salad

It’s crunchy, creamy, and also protein-y! Eat it on top of salad greens, on toast, or wrapped in a tortilla!
Ingredients
½ cup Nonfat Plain Greek Yogurt
¾ teaspoon Curry Powder
1 teaspoon Salt
Freshly ground black pepper
1 small apple cut into ½-inch dice
Juice from ½ medium lime
1 pound cooked chicken breast
½ cup packed fresh cilantro, roughly chopped
2 scallions, trimmed and thinly sliced
¼ cup almond slivers, toasted
Directions
Mix yogurt, curry powder, salt, and pepper into a bowl.
Toss diced apples with lime juice. This will keep the apples from turning brown.
Toss the chicken, cilantro, scallions, and apples into the curry yogurt mixture.
Sprinkle with almond slivers.
