Cans and Jars Bean Salad

Not everyone has access (or time or money) to have fresh vegetables at every meal. One of my clients had a broken refrigerator and struggle getting enough vegetables in her meals. So, this recipe is designed to use as many canned and jarred ingredients as possible but still keeping it nutrient friendly and tasty!
Ingredients
1 can Black Beans, drained
1 can Pinto Beans, drained
1 can Artichoke Hearts, drained
1/4 cup Kalamata Olives (or any olive you fancy)
4 oz Feta Cheese
1/2 bunch Flat Leaf Parsley, chopped
1-2 Green Onions, sliced
1/4 cup Dressing of Choice
(Optional)
Pickled Veggies
Canned Tuna
Extra Firm Tofu
Seitan
Diced Chicken
Extra or left over veggies you want use up
Directions
Mix it all together.
Serve with a side of whole grain toast.
